On Passover, we don't only abstain from eating chametz, we don't even own it. We thoroughly clean our homes in the days preceding Passover, and search any place that chametz might have been brought into during the year. This search is called BEDIKAT CHAMETZ, and it takes place the night before the Seder. Since it may not be possible to be rid of all the chametz in one’s possession, the rabbis have established a procedure in which we can transfer ownership of our chametz to a non-Jew (for whom chametz on Passover is permissible). Since there are many legal intricacies in this transference, a rabbi should be entrusted with its execution. The rabbi acts as the agent both to sell the chametz on the morning before Passover starts and also to buy it back the evening after Passover ends.
